Irish Soda Bread

 4 cups flour, 1 tsp baking soda, 1 tsp salt, 14 oz of buttermilk, 1 cup raisins (optional)

Sift together dry ingredients and mix in buttermilk. Knead lightly and place in a greased, floured round cake pan. Cut a cross in the top of the dough and cover the pan with another pan, such as a cookie sheet (this simulates a “bastible pot”). Bake at 425 degrees for 45 minutes, removing the cover during the last 15 minutes.
