Apple Cranberry Oat Muffins

1 Cup of Rolled Oats

1 Cup Buttermilk

1 Cup Whole-wheat flour

1 Teaspoon Baking Powder

1/2 Tsp Baking Soda

1/2 Cup Brown Sugar

1/2 Cup Applesauce

1/2 Cup Dried Cranberries

1 Egg

 

Place oats in a small bowl and pour in buttermilk.  In a large bowl stir together flour, baking soda, baking powder, and brown sugar.  Combine the two mixtures and add in applesauce, dried cranberries, and egg.  Mix well.  Pour batter into 12 prepared muffin cups, bake at 375 for 30 mins.
