Snack Attack- December 2014

Stained Glass Cookies are as beautiful as they are delicious, and they also make wonderful decorations or gifts. Whether you want to eat them, hang them up or share them, they are a perfect cooking project for the whole family to enjoy together and take pride in creating.

Stained Glass Cookies

½ cup butter, ½ cup sugar. ¼ cup brown sugar, 1 TBSP molasses, ½ tsp vanilla extract, 1 egg, 2 cups flour, ¼ tsp salt, ¾ tsp baking powder, 30 – 40 hard candies, crushed (Jolly Ranchers or Life Savers work well)

Cream together the butter and sugar. Mix in the molasses, vanilla and egg. Sift together flour, salt and baking powder and then stir it into wet mixture. Divide dough in half and refrigerate at least an hour (up to 2 days). Roll dough between wax paper to 1/4” thickness and cut into desired shapes. Transfer to prepared baking sheet and then cut out shapes from centers of cookies and fill the center with crushed candy (all the way to edges). Poke a hole in the top of each cookie for adding a ribbon to hang it later. Bake 9-10 minutes until candy is melted and bubbling and cookies are barely browned. Place pan on cooling rack for at least 10 minutes before removing cookies.
